Vapour as an appetizer, Liquid as a main course and Solid for dessert. An edible landscape inspired by the glaciers and icebergs of Antarctica. Each course will be introduced by a special guest: tornado chaser Melody Sturm (Vapour), oceanographer Gerbrant van Vledder (Liquid) and scientist and manager of the Dutch Polar Station at Spitsbergen, Maarten Loonen (Solid). With special guest philosopher and author René ten Bos, who will muse on landscape as a concept while a nightcap is served. Artist Esther Kokmeijer will collaborate with different chefs to model this dinner.
